Brewer / brewer’s helper

Full time, permanent, evening shift (mainly, but also days and weekends (occasionally))

Main duties

Brew beer according to recipes and procedures in order to meet quality standards and production schedule;
Actively participate in the creation of new beer recipes as well as in assemblies in the cellar;
Filter beer according to production schedule and procedures to meet quality standards for filtered beers.
Coordinate the preparation of the vats with the brewer’s helpers;
Prepare the beer for bottling / keg. Among other things, monitoring its carbonation level, temperature, yeast count, etc; Drains the yeast and the spent grains;
Checks the achievement of manufacturing criteria using tests and measurements. Reports all the results in the documents provided for this purpose (brewing and filtration registers);
Analyzes the beer undergoing fermentation and maturation, reports all the results in the documents provided for this purpose (fermentation sheet and beer report during manufacture);
Updates the table of holding tanks; Actively involved in improving performance, reducing losses, increasing quality during the performance of tasks and during production meetings;
Manage inventories of raw materials and by-products (organization and rotation of raw materials, coordination of emptying of spent grain and yeast tanks, etc.);
Manage the yeast (spent grain, waste yeast) according to the microbiological results of the laboratory and the brewing schedule. Performs assistance-mashing tasks (washing tanks, crushing grain, de-harvesting). Maintains good manufacturing practices while respecting occupational health and safety rules. Notifies the production manager and / or chief engineer and may be required to correct the situation himself in certain cases, in the event of problems or breakdowns. Keeps your workplace and tools clean at all times. Performs all other tasks required by management for the smooth running of operations.

And also… A solid experience as a brewer (5 years) and assembler of beers; (3 to 5 years old) Brewing experience on a DME brand kit (an asset). Academic training in brewing, food processing or any other relevant training. The ability to perform proportionality calculations (rule of 3, mixing and concentration, etc.).
